Founded in 1955, the esteemed Paul Chollet winery is nestled in the picturesque village of Savigny-lès-Beaune, in the heart of Burgundy. The vision of Paul Chollet was to create Crémants de Bourgogne that could rival the finest Champagnes, and over the decades, the winery has stayed true to this mission. The unique terroir of Savigny-lès-Beaune, with its diverse soil and climates, provides the perfect conditions for producing sparkling wines of exceptional quality. 

Paul Chollet winery employs the méthode traditionnelle, the same technique used in Champagne, to ensure that each bottle of Crémant de Bourgogne is crafted with the utmost care and precision. This commitment to quality is evident in every sip of their Brut and Brut Rosé, perfect for any occasion. 

Gilles Remy, who joined the winery in 2002, is known for his meticulous attention to detail and his passion for innovation. Gilles once shared a story about how he spent an entire night in the vineyard during a particularly challenging harvest season, ensuring that every grape was picked at the perfect moment. His dedication paid off, resulting in one of the most acclaimed vintages in the winery’s history. 

Joël Remy, Gilles’ brother, recounts how their father used to take them to the vineyards as children, teaching them the importance of respecting the land and the vines. This early exposure instilled in them a deep love for winemaking and a commitment to preserving their family’s legacy. Today, the Remy brothers continue to honor their father’s teachings, producing Crémants de Bourgogne which are a true reflection of their heritage and dedication.
