Champagne Hervé Dubois is a family-run estate that has been crafting exquisite Champagnes since 1920. Located in the prestigious Côte des Blancs, the winery was founded by Paul Dubois, who initially bought land in Avize to feed his horses used for transporting wine. Over time, this land became the foundation of their Grand Cru vineyards, and the family transitioned from transporting wine to producing their own exceptional Champagnes. Today, the winery is managed by Hervé Dubois and his daughter Nina, who continue to uphold the family’s commitment to quality and tradition. 

Nina Dubois, who joined the family business in recent years, brings a fresh and innovative perspective to Champagne Hervé Dubois, blending modern techniques with the time-honored traditions of her family’s winery. Her winemaking philosophy is deeply rooted in sustainability and respect for the land. Nina believes that great Champagne starts in the vineyard, and she is committed to eco-friendly practices that preserve the health of the soil and the vines. This includes minimal intervention in the vineyard, organic farming methods, and a focus on biodiversity to maintain a balanced ecosystem. She has been instrumental in implementing sustainable practices, such as using solar energy and reducing water usage in the production process. Her forward-thinking approach has not only enhanced the quality of their Champagnes but also positioned Champagne Hervé Dubois as a leader in environmental stewardship within the Champagne region. 

One of Nina’s core principles is the importance of patience and precision in the winemaking process. She says that “Champagne is a wine of time,” emphasizing the need for careful aging to develop the complex flavors and fine bubbles that characterize their Blanc de Blancs. Nina’s meticulous approach ensures that each bottle of Champagne Hervé Dubois is a true reflection of the terroir of Avize, capturing the unique minerality and elegance of the Grand Cru Chardonnay grapes, such as her first solo harvest when she spent countless hours in the vineyard, ensuring that every grape was picked at the perfect moment. Her hands-on approach and attention to detail have earned her the respect of both her family and the local winemaking community. 

In addition to her work at the winery, Nina also runs a charming Airbnb in Avize. The Airbnb is in the heart of the Côte des Blancs above the village’s historic post office just a short walk from the winery. Below the Airbnb rooms on the first level is a tasting bar, where you can enjoy Champagne Hervé Dubois.
