Domaine Lassarat & Fils

Domaine Lassarat & Fils is a warm, family-run estate tucked into the village of Vergisson in Burgundy, perched right at the edge of the Beaujolais region and framed by the iconic rocks of La Roche de Vergisson and La Roche de Solutré. The domaine was founded by Roger Lassarat in 1969, beginning with a few hectares, and over decades has expanded to roughly 11–16 hectares of vineyards across the appellations of Mâcon-Vergisson, Saint-Véran and Pouilly-Fuissé. Today his son Pierre Henri Lassarat is steering the domaine into the next chapter, hence the “& Fils” (and sons) in the name.

The philosophy here is straightforward: let the terroir speak. With vineyards that are highly parcelled—many very small plots less than one hectare—they emphasize site-specificity, so each wine has its own identity. Viticulture is managed with care: the domaine practises hand-harvested grapes, uses indigenous yeasts in the cellar, and adapts oak ageing and winemaking to best express the vintage rather than impose a house style.

What makes Domaine Lassarat & Fils particularly special is its location and evolution. Being at the southern end of Burgundy (the Mâconnais) gives it slightly more sun, and the soils around Vergisson—often limestone mixed with marl, and sitting alongside those legendary rocky landmarks—give the wines a crisp minerality and electric freshness. Each vintage is allowed to show its personality, and you’ll find subtle differences year‐to‐year—another part of the domaine’s charm.
