Winter Essentials Edition

Winter is the season when wine slows down and settles in. When bottles are opened earlier in the evening, decanters stay on the table longer, and meals feel a little more intentional. This month’s Bottle Club is built for exactly that kind of season. These are wines that shine in cooler weather: whites with texture and depth, reds that welcome a little air, and bottles that pair naturally with winter cooking such as roasted vegetables, braised meats, simmering soups, and long evenings indoors. Every wine here comes from producers who farm with care and restraint, letting place and vintage do the talking.

Domaine Pernot Belicard Aligoté 2023

Bourgogne | 100% Aligoté

A winter white that still feels fresh. This Aligoté comes from limestone-rich soils and is made with the same attention typically reserved for Chardonnay. Bright citrus and green apple are balanced by a subtle roundness that makes it ideal for colder months.

Why it’s a winter essential: Crisp enough to refresh, but structured enough for richer winter dishes.

Food Pairing: Roast chicken, fondue, root vegetables, goat cheese

Decanting: No decant needed

Domaines Schlumberger Pinot Gris “Les Princes Abbés” 2019

Alsace | 100% Pinot Gris

This is classic Alsace Pinot Gris. Gently rich, quietly powerful, and deeply comforting. The Schlumberger family has been farming these steep hillside vineyards since the early 1800s. Expect ripe pear, honey, baking spice, and a softly smoky finish.
